Pickled Aubergine
Ingredients
- 2 Aubergines
- 100g Tomato and onion sofrito mix (HOTELSA)
- 30 mL Balsamic vinegar
- 100g Grated cheese
- Salt
- Oil

- Cut the aubergines in slices, each one about a finger`s width. Then let it soak with water and salt in order to remove its bitterness.
- Meanwhile prepare the tomato and onion sofrito: put 100g of sofrito mix with 150cc of water, let it hydrate for 20 minutes. Then cook it just the time you like it.
- Once cooked, put the balsamic vinegar and mix it up. Leave it a pair of minutes more and set it apart.
- Dry and salt the aubergines, then cook them on the grill, in the oven or fry them.
- When they are ready, fill an oven tray with layers of aubergines and sofrito.
- Let it rest that way half an hour.
- Sprinkle the cheese on top and gratin during 10 minutes.
