Vegetables in sweet and sour sauce
Ingredients
- 1 Can of chopped pineapple
- 100g Diced carrots
- 400g Broccoli
- 50g Onion
- 1 Cup of water
- 1 Bunch of scallions
- 20g Slivered garlic
- 1 Little spoon of grated ginger
- 50g Green pepper
- Black olives
For the sauce:
- 1 Cup of the pineapple juice
- ¼ Cup of cider vinegar
- 2 Spoons of soy sauce
- Brown sugar
- 2 Spoons of cornmeal

- First of all, drain the pineapple but keeping the juice.
- Put all the vegetables but the broccoli in a large skillet or wok with ½ cup of water, the garlic and the ginger, then cook a few minutes.
- After a while put the broccoli and the remaining water, then stir and simmer it during 5 minutes more.
- Separately, mix the sauce ingredients with the chopped pineapple in a casserole and cook the mixture until the sauce is dense enough.
- In the end, display the vegetables accompanied with the sweet and sour sauce and the black olives.
